Eggplant seeds can be sown indoors in New Zealand during late winter or early spring and planted out after the last frost in your location to ensure successful growth. Generally, the optimal time for sowing indoors is from August to October, and planting outdoors during October and November when the soil has warmed sufficiently. Seedlings will take around 6-8 weeks to be of a size for planting in the garden, so count back the weeks from your last frost and this is when you should sow your seed. Ensure eggplant seedlings are planted into well-drained soil in a sunny spot to ensure fruit will ripen fully. By sowing your seed at the right time for your location you can enjoy a bountiful eggplant harvest during the summer months.
Eggplants often need staking for support, particularly when fruits form. Heavy crops can weigh down branches, risking damage or breakage. Installing stakes during planting helps stabilise plants as they grow. Tying stems gently with soft materials prevents bruising. Fertile soil and regular watering strengthen stems, reducing reliance on staking.
Eggplant seeds typically germinate within 7–14 days under optimal conditions. Warm soil, ideally between 20–30°C, encourages better germination results. Using a heat mat or warm location improves germination speed. Consistently moist soil ensures seeds absorb water needed for growth. After germinating, seedlings require ample sunlight to develop strong roots and healthy stems. October is ideal for starting eggplants in New Zealand, offering warm weather needed for healthy growth. Sow
seeds in late August or September for an early start. Warmer regions may allow outdoor planting by mid-spring. The maturation rate of eggplants will differ between varieties. Once germinated, the seedlings take 40 to 55 days to grow to a size where they can be planted in the garden. Once planted, it may take around 60 to 80 days for the fruit to develop and ripen, depending on the eggplant variety and growing conditions. Factors like regular watering, sufficient sunshine hours and nutrient availability play an essential role in the speed of growth and maturation of your eggplants. With consistent care, gardeners can expect to harvest ripe, delicious eggplants around three months from planting.
