Starflower. A popular culinary herb in the Middle Ages, it is now grown mostly for its bright blue, edible flowers that have a cucumber like flavour and as an excellent bee plant. Young leaves can be chopped and added to summer salads, or cooked like spinach. The flowers may be used as a garnish or floated in summer drinks. Borage contains a substance called gamma linolenic acid (GLA) that studies have shown can kill some cancer cells and inhibit the growth of malignant tumours by restricting blood vessel growth.
Maturity 60 days from direct sowing.
