DescriptionAlso known as Hamburg Parsley. It's still a herb and you can eat the leaves, but really a vegetable with a firm white tapered root and a pleasant nutty taste. The roots will grow up to 20cm over the summer months and makes an excellent autumn and winter vegetable to be used in soups, casseroles or with other roasted vegetables. Best eaten before it resprouts in spring, otherwise the texture will be woody.
