The cream coloured root with bright purple top has a pleasing rich flavour when cooked and is ideal in soups, stews and roast vegetable medleys. Best sown in late summer or early autumn as sweetness is enhanced by frosts. Likes loose free draining soil high in organic matter and can be sensitive to drought. Roots mature in 90 days and store well at low temps.
