How do you make Cucumber Pickle?

Welcome to our blog...and thank you for visiting. We are excited about our new blog and are hoping that we will be able to use it to share ideas about our gardens.

This week, Jen found herself (as many of us do this time of year) with an over-abundance of cucumbers, so she has been making pickle. She brought some in for lunch a few days ago, and it was delicious, so we thought we would share her recipe with you.

Cucumber Pickle

1 1/2 kg large cucumbers
1/4 C plain salt
6 medium onions

Clean, tail and slice the cucumbers and onions. Add salt and cover with water. Soak overnight and then drain off.

In a large pot, mix the following ingredients:
4 C white vinegar
3C sugar
2 dessert spoons of curry powder
1 1/2 t turmeric
1 T celery seed
2 T mustard seed

Add the cucumbers and onion and bring to the boil. Add a small tin of crushed pineapple.
You can also add chopped green and red pepper (especially if you have them handy in the garden!)
Boil for a few minutes, then thicken with about 6 T cornflower mixed with vinegar.
Bottle into sterilised jars....this recipe makes about 3 x 1 pint preserving jars.
