Making Mustard

How do you make grainy mustard?


I discovered how to make grainy mustard and couldn't believe how easy it was to make.

It was my turn to cook the leg of lamb for Christmas dinner and I found a great recipe that required lots of grainy mustard rubbed all over the lamb.  That's what inspired me to make my own and try some different flavours.


Ingredients


All you need are mustard seeds, vinegar and seasoning.  Then there are lots of options for adding different flavours so read on . . . . . . . . . .



Mustard is one of my go to ingredients when I want to add some flavour so I always have a jar in the fridge.  It is great added to:

Soups
 Salad dressings & sauces
Slow cooker meals
Roast or bbq meat as a rub
Stews and casseroles
Potato dishes




Mustard seed

The INGREDIENTS

1/4 cup black mustard seed
3/4 cup white/yellow mustard seed
1 cup vinegar


[TIPS: For the black seed I use Mustard Streaks or Mizuna
Apple Cider vinegar is my preference but any light coloured vinegar works]




The PROCESS

Place the above 3 ingredients in a bowl and stir.

Cover.

Leave for approx 24 hours or until all the liquid has been absorbed.

Whizz up the mix in a food processor with
1/4 teaspoon salt
& juice of 1/2 a lemon or lime

Process until creamy (it remains quite a grainy mix).

Extra OPTIONS

Here's some suggested additions you might like to experiment with for different flavours and to suit your tastes:

A splash of dark beer
Honey
Fresh ginger
Herbs - tumeric, rosemary, dill, tarragon or thyme
Chopped olives

The above recipe makes approx 3 small jars so I divide the mix and add different flavour options.
