Soybeans are a highly regarded legume with a wide range of uses. Eat freshly cooked in the pod as Edamame, or process into soymilk, tofu, soy sauce or soy flour. Dry soybeans average 40% protein and 18% oil. The strong well branched plants have a concentrated set of pods allowing for the whole plant to be harvested once the pods are plump. 90 days from sowing after last frost.
