Collard is a kind of Kale - a member of the Cabbage family, which does not form a head. Collards have been cultivated in Europe for over 4000 years but only in the Southern States of America have they become a tradition. High in vitamin A & C and minerals they contain more protein, fats and carbohydrates than any other green. Very heat and cold tolerant with semi-savoyed deep green leaves.
