Salsify Black Scorzonera
- Botanical Name: Scorzonera hispanica
Delicious distinctly black skinned root vegetable. Similar to the white skinned Salsify, it is more vigorous, has earlier maturity and wider leaves needing a greater distance between plants. Cultivate in the same manner as you would Parsnip by direct sowing from spring through to early summer and harvesting in autumn. (80-90 days)
