Celeriac Sedano di Verona
- Botanical Name: Apium graveolens rapaceum
Also known as Turnip Rooted Celery. Only the large swollen base of the stem, brown on the outside and white on the inside is considered edible. Celeriac can be used raw in salads, eaten as a cooked vegetable or used in soups and stews. Sedano is a medium early type with good bolt resistance. It will weigh 1.8-2kg at maturity and has a firm interior quality that remains white when boiled. Remove side shoots as they appear when the plant grows and swells. Harvest when bulbs are 7.5-10cm. Roots can be stored in sand for winter use.
