Salsify
- Botanical Name: Tragopogon porrifolius
The roots of this appetising vegetable have an oyster-like flavour. The roots can be served after boiling, with butter or other suitable sauces, or sliced and fried as mock oyster patties. Also popular for flavouring soups and chowders. Frost improves flavour and texture. The plant can be left in the ground and used throughout the winter and early spring, or can be lifted after the first frost and stored in sand in a cool place.
